Avocado Salsa Recipe for Superbowl

My hubby loves to make his World Famous GuacaSalsa, as he calls it, when we watch football. This recipe came about after I told him I wanted a healthier version that wasn’t mostly avocado….yes so I could eat more of it. 😉 We love it!
John’s GuacaSalsa – Avocado Salsa Recipe
Hi everyone, here is the secret to my special Guacasalsa! It is a Super Bowl Day staple at our house.
- 4 Hass Avocados
- 5 medium tomatillos
- 4 medium tomatoes
- 1 medium jalapeño
- 1 small onions
- 1 cup fresh cilantro, chopped
- 2 tablespoons of minced garlic (from jar)
- 2 tablespoons of diced jalapeño (from jar)
- 2 tablespoons of Fajita seasoning
- 1 tablespoon of garlic powder
- 1 teaspoon coconut oil
- 2 fresh garlic cloves minced
- 1 lime
In a medium sauce pan, heat a teaspoon of coconut oil over medium heat. Dice 3 tomatillos, 1 onion, 1 tomato, 1 jalapeño, 1 garlic clove and add to oil in pan. Add a bit of fajita seasoning, and a dash or two of garlic powder. Stir until onions are translucent and tomatillos have softened. You’ll know, just don’t overcook them. Set the pan aside to cool.
Dice the remaining tomatillos, tomatoes, onion, peppers and the avocados into a large bowl. Save the lime for later, but add the rest of the ingredients and the sauteed tomatillo mix. Fold gently. The goal is to mix it up without turning the whole thing to mush.
Feel free to sample and to adjust the flavor to your preference. No two batches are ever the same, the onions and peppers like to influence the end result. We like to let the Guacasalsa sit in the frig for a while for the flavors to meld. Drizzle lime juice to taste. It will also keep the avocados from turning brown as quickly. Also you can put a couple of the avocado pits in the bowl, they will also preserve the freshness.
Serve with fresh veggies or bean chips or tortilla chips. 🙂
You can also add this to your tacos. We will be having lettuce wrap tacos Sunday night. And… if there are any leftovers, stir in a can of fat-free refried beans and heat in a pan. This can be used as a side dish, taco filling etc.
One more tip, we use scissors to cut up the cilantro.
