It seems like summer time and burgers go hand in hand. In the past couple of weeks a few clients have asked me for a veggie burger recommendation that is Lora approved. Easy Veggie Burger Recipe

Serves 4
Prep Time: 20 min
Cook Time: 8 min


  • 1/2 cup quinoa
  • 1 15oz can chickpeas rinsed and drained
  • 2 carrots, grated
  • 1 jalapeno pepper, seeded and minced
  • 1 scallion, minced
  • 2 teaspoons lemon juice
  • 1 tablespoon ground flax meal
  • 2 tablespoons water
  • 1 tablespoon coconut oil
  • Sea salt & pepper to taste
  • 1 cucumber, sliced
  • 1 tomato, sliced
  • 1 avocado, sliced
  • 4 cups baby kale, spinach or mixed greens
  • Juice of 1 lemon


Bring 1 cup of water to a boil in small saucepan. Add quinoa, reduce heat to low, cover and simmer for 13 minutes. Remove from heat & let stand for 5 minutes. Drain any excess liquid turn onto baking sheet to cool.

In a food processor, pulse beans until coarsely chopped. Place in a bowl with the quinoa. Add carrot, jalapeno, scallion, lemon juice and mix well.

In a small bowl, whisk ground flax meal with water and let sit for 2 minutes. Add the flax to bean mixture and stir to combine.

Heat oil in large skillet over medium high heat. Add 1/4 cup of the mixture to skillet and flatten with spatula. Repeat with the remaining mixture. Cook 3-4 minutes per side until browned and warmed through.

Toss your greens with lemon juice and divide among 4 plates. Place burgers on plate and top with sliced cucumber, tomato and avocado.
